Vinification: Harvest at the beginning of October, manual harvesting, transport of small containers, destemming, fermentation in stainless steel tanks, fermentation temperature from 25 to 28 ° C, maceration of 15-20 days, racking and draining of the marc, defication and start of aging in steel tanks in March-May. Minimum aging 5 years of which at least 3 in oak barrels of 40 Hl. and tonneaux in oak wood French of 3.50 Hl.
Tasting notes: The wine is clear, bright, with an intense ruby red color, with garnet reflections; with an intense, persistent, ample and ethery aroma, hints of spices, undergrowth, small red fruits and wilted rose are recognized. The taste of the wine is elegant, harmonious, with a long aromatic persistence, with balanced and enveloping tannins, a dry and persistent finish.
Pairings: Red meats, game, dishes with mushrooms and truffles, it also goes well with aged cheeses such as Parmigiano Reggiano and Tuscan Pecorino. Excellent meditation wine.
